This banana bread has a mystery. Need to know what it is? I'm certain you do. I looooove banana bread. It's so useful for breakfast, early lunch, and bites. I've been known to eat much too much at whatever point it's on my counter (or in my cooler). It's particularly useful for a potluck or early lunch since you a make it early, at that point cut it and serve it.

INGREDIENTS
- 2 large eggs
- 1/4 cup water
- 1 medium brown-spotted banana mashed
- 2 teaspoons vanilla extract divided
- 1/2 cup vegetable oil
- 1/3 cup granulated sugar
- 2 cups Krusteaz Pancake Mix
- 1 cup chopped strawberries
- 3/4 cup powdered sugar
- 1/8 teaspoon strawberry extract
- 2-3 tablespoons heavy whipping cream
- 1-2 drops red food coloring optional
DIRECTIONS:
- Preheat oven to 350°F. Spray an 8x4 inch loaf pan with nonstick cooking spray.
- Place eggs, water, banana, and 1 teaspoon vanilla extract in a blender and blend until smooth. Stir together oil and sugar in a large bowl. Add banana mixture and the pancake mix and stir until combined (batter may be slightly lumpy). Stir in chopped strawberries.
- Pour batter into prepared pan. Bake 30-40 minutes, until golden brown and a toothpick comes out clean. Cool completely before frosting.
- To make frosting: whisk together powdered sugar, remaining 1 teaspoon vanilla extract, strawberry extract and 1 tablespoon heavy whipping cream until a thick glaze forms. Add another tablespoon of heavy whipping cream and whisk until smooth, adding more as needed for desired consistency. Stir in red food coloring, if desired. Frost cooled bread and slice to serve.
