Mushy, smooth and delectable, this Apple and Cheddar Cheese Soup is made with tart apples and destroyed cheddar. It's a snappy and simple weeknight dinner the entire family will adore!
My apple plans have all been roused by my apple tree. It's gigantic. It's wonderful. Also, IT.IS.FULL! All things considered, it was full … now it's on its last barely any apples and those are going to descend due to the main ice that we had the previous evening. Blah. Can't buhlieve we're that a lot nearer to winter. GAH! In any case!… alright, since I consider it, this climate thing ain't unreasonably terrible… before you know it, we will be knee-somewhere down in peppermint and chocolate! Whoopee!
However, for the present, it's about the apples. (I'm despite everything considering peppermint and chocolate) … focussss! Apples. I asked my Facebook adherents what apple formula they might want to see first and the decision in favor of soup won by a surprising margin!

Ingredients
- 3 tablespoons butter
- 1 yellow onion , diced
- 1 large carrot , sliced into thin rounds
- salt and fresh ground pepper to taste
- 1/4 cup all-purpose flour
- 2 teaspoons chili powder
- 4 cups vegetable broth
- 1 large tart apple , diced
- 1 cup apple juice
- 1-1/2 cups shredded cheddar cheese
- salt and fresh ground pepper
- 1 tart apple , diced, for garnish (optional)
Instructions
- Melt butter in a large saucepan or soup pot.
- Add onion and carrot; cook over medium-low heat for 7 to 8 minutes, or until vegetables are tender.
- Stir in flour and chili powder.
- Slowly add broth and continue to stir until everything is well combined.
- Add apple to soup and cover.
- Reduce heat to a simmer and continue to cook for about 10 minutes, or until soup is thick and apples are tender. Stir occasionally.
- Slowly stir in apple juice and shredded cheddar cheese.
- Continue to cook and stir until cheese is completely melted.
- Remove from heat.
- Let cool for 2 minutes.
- Transfer to a blender and blend until smooth.
- Taste for salt and pepper.
- Ladle soup into bowls and garnish with diced apple.
- Serve.
