You know those evenings when you're running late and don't have the foggiest idea what to prepare for supper? Well this straightforward egg and bacon pie is exactly what you need! It will be on the table shortly and you just need 6 fundamental fixings. How great is that? That's right, I'm a major, enormous aficionado of simple weeknight suppers.

Utilizing defrosted puff baked good sheets makes this formula SO natural! To make this egg and bacon pie, you basically line a pie or tart tin with the puff baked good sheets. Fry off the bacon and onion and add to the tin. Sprinkle over some ground cheddar and pour over the egg blend. Include a touch of additional cheddar on top and pop it into the stove. That. Is. It. Ingredients

  • 2 sheets puff pastry defrosted
  • 200 g bacon chopped
  • 1 brown onion diced
  • 3/4 cup cheese grated
  • 5 eggs
  • 125 g (1/2 cup) milk or cream

Instructions
Conventional Method

  1. Preheat oven to 210 degrees celsius (200 degrees if using fan-forced).
  2. Lightly grease a 12cm X 36cm pie or tart tin (loose-bottomed if possible).
  3. Place one sheet of the puff pastry into the tin and press down. Use the second piece to cover any gaps that remain.
  4. Fry the bacon and onion over medium heat in a frying pan until the onion has softened and the bacon has started to crisp up.
  5. Place the bacon and onion into the bottom of the tin on top of the pastry.
  6. Sprinkle over half of the cheese.
  7. With a fork, lightly beat the eggs and milk together. Pour the egg mixture into the tin. 
  8. Sprinkle over the remaining cheese.
  9. Bake in the oven for 20 minutes or until golden and cooked through. Allow to stand for 10 minutes before serving.

Thermomix Method

  1. Preheat oven to 210 degrees celsius (200 degrees if using fan-forced).
  2. Lightly grease a 12cm X 36cm pie or tart tin (loose-bottomed if possible).
  3. Place one sheet of the puff pastry into the tin and press down. Use the second piece to cover any gaps that remain.
  4. Place the cheese (chopped unto chunks) into the Thermomix bowl. Grate on Speed 8, 8 seconds. Set aside. Wash and dry the Thermomix bowl. 
  5. Place the bacon and onion into the Thermomix bowl. Chop by pressing Turbo 3-4 times (or until chopped to your liking).
  6. Add the olive oil and saute for 4 minutes, 80 degrees, Speed 2 (Reverse). Drain off any excess oil and then pour the mixture bacon into the prepared tin.
  7. Sprinkle over half of the cheese.
  8. In the Thermomix bowl (no need to clean it this time), add the eggs and milk and mix on Speed 6, 10 seconds. Pour the egg mixture into the tin. 
  9. Sprinkle over the remaining cheese. Bake in the oven for 20 minutes or until golden and cooked through. 
  10. Allow to stand for 10 minutes before serving.
