Throughout the previous barely any weeks each time I am at our neighborhood ranchers showcase I have gotten a container of the most astounding beefsteak tomatoes from one of my preferred produce sellers Springh Farms. We've been getting a charge out of them on sandwiches or plates of mixed greens generally, yet these tomatoes were so new and flavourful I needed to make something that truly displayed exactly how astonishing these tomatoes are.

This Italian marinated tomato plate of mixed greens is the ideal method to spruce up and flaunt totally ready beefsteak tomatoes or some other field new tomato!

Italian Tomato Salad (Marinated Tomato Salad) #vegetarian #veggies

INGREDIENTS

  • 3 Beefsteak tomatoes sliced 1/3" thick
  • 4 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1⁄2 tbsp lemon juice
  • 3 tbsp minced Red Onion
  • 4 large leaves fresh basil finely diced
  • 1 tbsp diced fresh parsley
  • 1 clove garlic crushed
  • 1⁄2 tsp fine sea salt
  • fresh ground pepper

INSTRUCTIONS

  1. Slice the tomatoes into slices about 1/3 of an inch thick and arrange on a platter with a rim in a single layer.
  2. Whisk together the olive oil, red wine vinegar, lemon juice, minced red onion, diced basil and parsley, crushed garlic and sea salt to make the marinade.
  3. Pour the marinade evenly over the tomatoes ensuring that they are all covered in marinade and that the herbs and onion are spread out across the top of the tomatoes.
  4. Place the platter in the fridge and let sit for at least an hour so that the tomatoes can absorb the marinade.
  5. Garnish with fresh ground pepper when ready to serve.
