How To Make A Breakfast Sweet Potato #vegetarian #healthy

Make proper acquaintance with your new most loved plant-based, vegan and gluten free breakfast! Because of the fiber, protein and great fats in this feast, it will keep you fulfilled and full throughout the morning! 

I make this morning meal yam in any event once per week! Why? Brace yourself for what I'm about to tell you… You know those occasions when you wake up covetous and you need something more than yogurt with granola and natural product? This morning meal yam will have your back. 

It's brimming with Vitamin C, fiber and protein. I'm getting a vegetable in before anything else. Truly, it's a dull, sweet-tasting veggie yet hello, still a veggie!!

How To Make A Breakfast Sweet Potato #vegetarian #healthy #breakfast #potato #veggies

Ingredients

  • 1 sweet potato1 sweet potato
  • 1 medium banana, sliced1 medium banana, sliced
  • 1-2 Tbsp. creamy peanut butter1-2 Tbsp. creamy peanut butter
  • 1/2 Tbsp. chia seeds1/2 Tbsp. chia seeds
  • 1/4 tsp. ground cinnamon1/4 tsp. ground cinnamon
  • Other topping ideas: yogurt, granola, chocolate chips, walnuts, slivered almonds, dried cranberries, other nut butters like almond butter.

Instructions

  1. Wash and dry your sweet potato.
  2. Poke holes in it with a fork and wrap it in a paper towel and cook in the microwave until you can stick a fork all the way thru and it feels done (soft). Mine takes 8-10 minutes in the microwave. (Directions in notes on how to make a sweet potato in your Instant Pot!)
  3. Carefully cut the sweet potato in half and place banana slices on the sweet potato. Then drizzle the peanut butter on top, followed by the chia seeds and ground cinnamon. 
  4. I eat the skin and all! Such a satisfying breakfast. Enjoy!
