You all, this low carb singed chicken is the thing cookout dreams are made of! In addition, it's so straightforward, thus quick, it's PERFECT for preparing for a group.

I love low carb chicken plans like this one since they're an economical and quick approach to feast prep a whole week of low carb meals. In addition, they taste like eating at a home-cookin' eatery – less the extra carbs and cost! Win-win!

This low carb seared chicken is, in a word, delicious! What I love most about this formula… My significant other and I did a next to each other trial of singed chicken plans. He was a culinary specialist (and a darn decent one!), so he made customary singed chicken. I made this low carb variant. After a blindfold trial, neither of us could differentiate. Truly! Why squander the carbs?! This stuff is MAGIC!

Ingredients
Marinade (optional!):

  • Pickle Juice enough to cover the chicken in a resealable baggie

Fried Chicken:

  • 3 Lbs Chicken Tenders
  • 4 Ounce Pork Rinds
  • 2 Teaspoon Thyme
  • 1 Teaspoon Kosher Salt
  • 1 Teaspoon Black Pepper
  • 1 Teaspoon Oregano
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Smoked Paprika
  • 1 Teaspoon Cayenne Pepper
  • 2 Eggs

Instructions
Marinade (optional):

  1. Place chicken in a large resealable baggie.
  2. Pour pickle juice over the top. Make sure there's enough to cover the chicken.
  3. Place chicken in the fridge and allow it to marinate overnight.
  4. Rinse chicken before coating it...

Chicken:

  1. Preheat oven to 400 F and line a baking sheet with aluminum foil.
  2. Place pork rinds in a resealable bag and crush into a panko sized grain. Be sure to leave a few large pieces.
  3. Add thyme, salt, pepper, oregano, garlic powder, and smoked paprika to the bag and shake a few times to combine.
  4. Pour the pork rind combo in an even layer on a flat plate.
  5. Beat eggs is a wide mouthed bowl.
  6. Dip chicken into the eggs, then into the pork rind combo — make sure to evenly coat all sides. Place chicken onto prepared baking sheet.
  7. Once all chicken tenders are evenly coated, bake in the oven 24 minutes, or until chicken is cooked all the way through.
  8. Allow chicken to cool and serve with your favorite dipping sauce. Enjoy!
